Introduction: Beef Stew

About: I am married with two children. Spring, summer, and fall are my very favorite times of the year. I enjoy working in the yard, sewing, cooking, quilting, gardening, and creating. I do this to keep my sanity.
I recently discovered that rutabagas are high in potassium, vitamin C,and Manganese. It is low in Sodium, Fat and Cholesterol. I don't usually cook with them but have decided to add them to our regular diet for their benefits. 
If you are looking for something to make for dinner that keeps your house cooler, try this stew recipe in a crock pot. I love stew anytime. Unfortunately my crock pot is packed up! It was a little cooler today so I spent my day cooking. 

Step 1: Ingredients

When I make stew or salads I usually wash and cut up extra for stir fry the next day. It saves me time.
1 Peeled Chopped potato
1/4 Chopped tomato I just added this because I needed to use it up
4-6 Chopped carrots
6 Chopped celery
1 Chopped small onion
1/2  Chopped bell pepper
2 Chopped Rutabagas
1 Chopped squash
1/2 Small pkg mushrooms (you will slice them)
1 Large package stew meat or 2 small packages hubby said I did not add enough meat.
3 Minced garlic buds
Vegetable soup mix
3 cubes of chicken broth
2 Cans diced tomatoes 
Approx 8 cups water
Cumin optional
Salt optional
Pepper optional

Step 2: Utensils

Crock pot or stock pot with a lid
Skillet
Spatula
Large spoon
Cutting board
Knife
Measuring cup
Garlic press optional

Step 3: Season and Cook the Stew Meat

​Season the meat.
Allow the meat to reach room temperature.
Cook the meat in a skillet.
While the meat is cooking start preparing the vegetables. 

Step 4: Wash and Cut Vegetables

Wash and chop all the vegetables.
Mince the garlic.
Slice the mushrooms.

Step 5: Stock Pot


Mix 2 cups of water with the soup mix.
Add the garlic.
Mix 2 cups of water to the chicken cubes.
Pour into the stock pot.

Step 6: Cook

Cook on medium heat and  . . . .
Add the canned tomatoes 
Potatoes
Carrots
Bell pepper
Celery
Onion
Squash
Add the cooked stew meat 
Season as desired

Step 7: Add Rutabagas, and Sliced Mushrooms

Add the rutabagas and mushrooms about 20 minutes before the stew is ready.
It took my stew 2 hours until I added the rutabagas because of a high altitude. 
Add the fresh tomatoes 5 minutes before serving.

Step 8: Sunshiine's Final Thoughts

Cooking meals in the crock pot is so much cooler than using the stove top. There are many main course meals that can be made in a crock pot. I have even baked a cake in one. Stay cool!
