Introduction: How to Cook Crackling Crusted Pork Ribs (100th Video Recipe!!)

Ribs are a staple of Low and Slow BBQ and I wanted to add a twist because this is the 100th video recipe!

Thank you to everyone for their support over the last year and I hope this recipe is something fun but also special.

Ingredients

  • Pork Ribs
  • Pork Skin
  • BBQ Sauce
  • Brown Sugar
  • Butter

Step 1: You'll Need a Good Set of Ribs, Make Sure They’re Nice and Meaty.

Make sure to dry with paper towel and remove the membrane.

I like to start off just using my finger to find the edge before using the paper towel to remove the rest.

Next, we need to apply the rub.

For this recipe, I’m using Sucklebuster pork rub.

Completely cover the ribs with rub.

Step 2: Set Up the BBQ Using the Snake Method.

Add your choice of wood, I’m using some cherry wood.

Step 3: Prep Your BBQ and Bring It Up to a Temperature of 250f or 125c

Place the ribs thick side closest to the heat.

Let them cook for an hour, make sure the temperature stays level.

Step 4: While the Ribs Are Smoking We Need to Cook the Crackling for the Crust.

Most butchers will sell you a piece of pork skin.

Score on both sides in a checker pattern, this will help stop the skin from curling up while it cooks.

Place skin side up on a tray lined with baking paper.

Season with salt, the salt will help the skin to crisp up nicely.

Step 5: Place in the Oven on the Grill Setting a Full Heat.

The skin will crackle up, it’s important to keep an eye on it because once it crackles it will start to burn shortly after.

Now the skin as crackled, take it out and let in cool down.

Step 6: After Two Hours of Cooking It’s Time to Sauce and Wrap.

Now place the ribs on the foil and brush with the homemade BBQ Sauce.

For extra flavour add some brown sugar and slices of butter.

These will melt into the ribs creating even more flavour.

Repeat for the other side.

Wrap the ribs in the foil.

Step 7: Cook for One More Hour.

Step 8: Now That the Crackling Has Cooled Down It’s Time to Cut It Up.

Cut the crackle into slices first, this will give you manageable pieces.

Chop the crackling until it has a crumb like texture.

Place in a bowl and place to one side.

Step 9: To Finish Off These Ribs Unwrap Them and Place Them Back in the BBQ.

Bush with the homemade BBQ sauce before letting them cook for 5 to 10 minutes.

Step 10: Coat With the Sauce One Last Time.

Now it’s time to add our crust.

Add a layer of the crackling, it will add a nice crunch.

Cook for 10 to 15 more minutes.

Step 11: Time to Take Them Off and Rest.

Step 12: Once the Ribs Have Rested, Slice Them Up.

The crunch of the crackling add a beautiful contrast to the soft tender ribs.
