Introduction: How to Cook Loaded Chicken Nachos

Nachos are on the tasty meal that can be thrown together quickly and using anything you find in your fridge.

By cooking this on the BBQ, it’ll give you a subtle smoke flavor.

Ingredients

    • Corn Chips
    • Cheddar Cheese
    • Chicken
    • Chorizo
    • Avocado
    • Red Capsicum
    • Green Capsicum
    • 2 Spring Onions
    • 2 Tomatoes
    • 1 Lime
    • Salt and Pepper
    • Jalapenos
    • Black Beans
    • Coriander

    Step 1: To Start Off We Need to Do Some Prep.

    Slice a red onion into strips.

    Slice a red capsicum into the strip and then slice in half.

    Follow by a green capsicum.

    Step 2: Roughly Chop Two Spring Onions.

    Roughly chop two spring onions.

    Next cut two tomatoes in half and remove the seeds. Then roughly dice.

    Roughly chop one stick of chorizo.

    Then dice some precooked chicken.

    I had some leftover chicken for the night before.

    Now we’ve prep all these ingredients it’s time to start cooking.

    Step 3: Light a Chimney of Charcoal.

    Setup for direct grilling.

    Place a cast iron pan over the charcoal.

    Add some oil before adding the onions.

    G-fresh sent me some of this chilli salt to try out. It’s packs a nice punch and saves adding chilli to the dish.

    Cook off the onion before add the capsicums.

    Add 1 tablespoon of minced garlic.

    Cook until the capsicums begin to soften.

    Take the pan off the heat and transfer the onions and capsicums to a bowl to cool.

    Step 4: Place the Pan Back Over the Heat and Add the Chorizo.

    Brown off before adding the chicken.

    Season with the chilli salt.

    Once the chicken has heated through and soaked up the oil from the chorizo, take the pan off the heat.

    Step 5: The Onions and Capsicums Have Cooled, Add the Diced Tomato to the Bowl Along With the Spring Onion.

    Mix together.

    Step 6: We’re Going to Make a Quick and Easy Guacamole.

    Start by cutting the avocado in half and carefully removing the seed.

    Remove the skin and add to a bowl.

    Next roughly chop half a hand full of coriander.

    If you’re not fan you can leave it out.

    Then squeeze in the juice of half a lime.

    Step 7: ​Mash Together Using a Fork.

    Season with salt and the quick and easy guacamole is done.

    Step 8: Grate Some Cheddar Cheese.

    Step 9: Now It’s Time to Make These Nachos.

    Please don’t wash the pan because you’ll loose all that beautiful flavour that has built up in the pan.

    Start with a layer of corn chips.

    Follow with a layer of the homemade salsa.

    Then a layer of our meats.

    And a layer of jalapenos if you like to add a little more heat.

    Next a layer of black beans.

    Step 10: Then Finally a Layer of Cheese.

    Add another layer of all of the ingredients.

    The Nachos is ready to grill.

    Step 11: ​I’m Going to Add a Little Extra Flavour by Adding Some Cherry Wood.

    Place the pan opposite the charcoal and cover with the lid.

    After about 5 to 10 minutes rotate the pan.

    Step 12: These Are Looking Good.

    Cook for another 5 minutes.

    Step 13: All That’s Left to Do Is Top It With Some Guacamole and Some Sour Cream.

    This nacho is pack full of flavour and tastes amazing.
