Introduction: How to Cook Philippines Inspired Adobo Chicken Wings

Adobo is meat marinated in soy sauce, vinegar and garlic before it's simmered and then grilled.

After being inspired I couldn't think of a better way of using this technique other than cooking Adobo chicken wings. I'll post my recipe in the comments.

The amazing rich flavours you get from marinating the chicken this way is beautiful!

Ingredients

  • Chicken wings
  • 3/4 Soy Sauce
  • 1/2 White Vinegar
  • 3 Cloves Garlic
  • 2 tsp Red Chili Paste
  • 2 Bay Leaves

Step 1: In a Large Bowl Add 3 Finely Chopped Garlic Cloves.

Then add 2 Bay Leaves.

2 teaspoons of Red Chili Paste.
You can leave out the chilli if you don't like the heat.

Step 2: ​Then Add 1/2 a Cup of White Vinegar.

Followed by 3/4 of a cup of Soy Sauce.

Mix together.

Step 3: Add the Chicken Wings to the Bowl and Mix Through the Marinade.

Cover and marinate in the fridge for 3 hours or overnight.

Step 4: Add Your Lit Chimney of Charcoal to the BBQ.

Step 5: Place the Wings Into a Cast Iron Pan With the Marinade.

Simmer for 15 minutes to kick start the cooking process.

Step 6: Move the Wings to One Side for Indirect Cooking.

Leave the marinade in the pan to thicken into a sauce.

Step 7: After 5 Minutes the Marinade Has Thickened Into a Rich Sauce.

Take it off and keep to one side.

Step 8: Cook the Wings Indirect With the Lid on for a Total of 20 to 25 Minutes.

To finish off, top with the rich sauce made from the marinade.

Step 9: Eat With Your Choice of Dipping Sauce.
