Introduction: How to Reverse Sear a Perfect Tomahawk Steak on the BBQ

Flip the script and cook the steak in reverse.

Most steaks are cooked by first searing each side and then finishing (baking) in the oven.

That method is a useful one and produces a steak that has the characteristic "bullseye" doneness.

While this method will give you an edge to edge doneness to your liking.

Ingredients

  • Tomahawk Steak
  • Salt and Pepper

Step 1: Light a Chimney of Charcoal.

Layout the charcoal on one side for indirect cooking. Place the grill over top.

Step 2: With Reverse Sear the Steak Needs to Be a Least an Inch Thick, Thicker the Better.

Pat the steak dry with paper towel, this will help the steak cook evenly.

Season with coarse salt and pepper, I'm using G-fresh's great range of dried herbs and spices. Now your steak is seasoned, it's time to start cooking.

Step 3: Once Your BBQ Settle at About a Temp of 250f or 125c It's Time to Cook

Place the steak on the other side of the BBQ, this is called direct cooking which I'm sure many of you already know.

If you would like to use something extra you could add some wood chips or a small amount of wood to add a smokey flavour.

Cover with the lid, make sure to check the temp of the BBQ every ten or 15 minutes.

Step 4: Cook Until the Steak Reaches an Internal Temp of 125f or 52c.

The reason for cooking it a few degree under to the normal temps for medium rare is to give ourselves a buffer for when we sear the steak.

When the steak is close to reaching the temp we want, light a chimney of charcoal.

Now the steak has reached the temp we want take if off to rest.

Step 5: Add the Freshy Lit Charcoal to Get the BBQ Ready for Grilling.

You want it nice and hot to sear the outside of the steak as quickly as possible.

Sear for 1 and a half to 3 on one side and then turn over, sear the other side for the same amount of time.

You want the outside of the steak to have a nice crust.

Step 6: Take It Off and Rest It for a Couple of Minutes Because We Rested It Before Searing It Won't Need As Much Time.

All that's left to do is slice into it.

Step 7: ​Look How Perfectly Cook It Is, Medium Rare.
