Introduction: Nacho Cheese Rotini Salad on a Chip

About: I am married with two children. Spring, summer, and fall are my very favorite times of the year. I enjoy working in the yard, sewing, cooking, quilting, gardening, and creating. I do this to keep my sanity.

My diet consist of salad almost everyday. I just can't seem to get enough of it. I can also eat Mexican food 2-3 times or more a week. I remember years ago when I was pregnant with my first child, I craved tacos everyday! We lived on a taco diet for 9 months. I kid you not. I am amazed that my husband did not complain about it. The interesting fact is I still love tacos! I still crave tacos. So here I am thinking up yet another dish to add to my family favorites!

Today's entry is Nacho Cheese Rotini On A Chip. I was very excited when I tried this. It was very good. In fact it was so good I just had to share it with all of you. If you are looking for a very healthy salad this is it. Did you know if you consumed 1/2 cup of parsley it would be equivalent to that of eating 10 oranges?

Step 1: Recipe

This recipe is a family size recipe.  You place the salad on the chips at the time of serving so it depends on the size of your family how many Doritos you will need. 

Nacho Cheese Dorito Chips
1 Small package of cooked  Rotini
1-2 bunches chopped parsley.   We like much more than this, but I recommend starting with 1 and work up tasting as you go.
1 Onion chopped
1 Cucumber chopped
1 Bell Pepper chopped
4-5 Roma tomatoes chopped
2 Garlic buds crushed through a garlic press
The juice of 1-2 lemons (Read the instructions below about juicing the lemons)
Parsley chopped
Olive oil to taste
Salt and pepper
Lawrey's garlic salt with parsley
1 Can black olives chopped
1 Pound cooked bacon chopped ( You want this very crispy)

Please note:  Place a clean lemon in the microwave for 20 seconds.  Let it set until it is room temputure.  If you don't it will squirt out lemon juice all over.  Then gently roll the lemon over the counter pushing slightly to soften it.  Then cut it in half and squeeze the juice out using a juicer if you have one. 

Shiny thin skinned lemons are the best to buy. 

You will need regular kitchen supplies for making a dinner  for this recipe , there are no special utinsils other than maybe a garlic press and lemon juicer if you have one.  

Step 2: Cook the Bacon and the Rotini

Fry all the bacon until crisp and set aside.
Cook the rotini according to the directions,  strain and place it in a bowl and put it into the fridge.


Step 3: Combine the Ingredients

Combine all the ingrediants and mix well.
Add the lemon juice.
Season with the Lawrey's.
Scoop onto the Doritos.

The Nachos in this recipe are a great compliment to this salad.  I love the cheesy flavor it added as well as the crunch.
