Introduction: Pacman Lemon Cake

This Pacman cake is just a lemon cake with the simple concept of pacman combined with it.

If you want to follow the recipe for lemon cake that I've made, follow the Steps #3 - end. This recipe makes 1 nine-inch cake, compared to a normal sized 2 layer 9 in. cake, commonly used.

Another method, instead, I recommend, is to buy a lemon cake box mix, make the whole thing, and make a two nine-inch layer cake, with frosting in the middle, and on the top.

So either it's a lemon boxed cake mix, my recipe, or some other cake recipe that you enjoy; just cut out a mouth, and ice the cake with bright yellow food coloring.

Step 1: Ingredients

Ingredients: (makes 1 nine-inch cake)

1 1/2 cups sugar

⅛ cup butter

⅛ cup oil

1 tsp. lemon zest

2 eggs

1/4 tsp. vanilla extract

1 ¼ cups flour

¼ tsp. salt

1 1/2 tsp. baking powder

¼ cups milk

¼ cup lemon juice

FROSTING:


1 1/2 cups confectioner's sugar

6 tablespoons butter

2 tablespoons lemon juice

__ drops food coloring

NOTE:

For a glaze, instead of a buttercream icing, omit the butter in the frosting recipe.

Step 2: Preparation

Preheat oven to 350 degrees.

Grease a nine inch cake pan. If you are using a boxed mix, grease 2 nine inch cake pans. (at least, if the box says it makes two cakes).

Then put parchment paper down on the pan. Then grease the parchment paper.

NOTE:

without the parchment paper, the cake will be likely to stick to the pan, and very hard to get out in one piece.

Step 3: Wet Ingredients

In food processor, process sugar and lemon zest until zest is finely blended in. Place zest/sugar mixture into stand mixer.

Whip sugar mixture with eggs on high for 1-2 minutes until creamy and fluffy. Add butter and oil. Then add vanilla. Stir until combined.

Step 4: Dry Ingredients + Baking

Combine the flour, baking powder, and salt in a medium bowl. Pour into the wet ingredients in the stand mixer, and mix until combined.

Add first the milk into the stand mixer, mix, and then add the 1/4 cup lemon juice, and mix again until combined.

Pour batter into prepared cake pan, and bake in preheated oven for 25 minutes or until golden.

Step 5: The Icing

Whip softened butter in medium bowl. Then add confectioner's sugar, and whip until combined. Add lemon juice and whip again. Add food coloring until frosting is bright yellow.

NOTE:

Again, if you want a glaze, and not a thick buttercream frosting, and if you don't like the flavor of lemon juice mixed with butter, just omit the butter.

Step 6: Decoration

Carefully place the cake on a ring of parchment paper on the serving tray right side up. First do a very thin layer of the frosting, called the ‘crumb’ layer. Place in fridge for 20 minutes to set icing. This is only your first layer.

Now for the final layer. Take the cake out of the fridge and place a bunch of the frosting on the top. Proceed to smooth it over the top of the cake, and down the sides. Try to do it nicely--this is your final presentation layer! Place in the fridge again to harden for another twenty minutes.

Optionally, for smoother icing, dip metal frosting spatula in very hot water. Take out and dry, and smooth out the buttercream icing with it.

Then finally, cut out a rather large piece, about 1/5 of the cake, remove it, place a cut oreo as the eye, and you have pacman. Cool in fridge for twenty or so minutes if you already haven't before serving.

Step 7: Done!
