Every year, we participate in a nearby town Brrr Ride. This bicycle ride is approximately 25 mikes round-trio and happens no matter what the February weather may be. This year was a tad warmer than last year was around 20 degrees at the start. I thought of this recipe as a nice treat that would go well with adult beverages after finishing the ride.

Although the title indicates that this is a dip, it is hearty due to the chicken and cheese which helps warm the body when you’re cold and hungry. It also has a level of spice that is just right and appeals to many riders in our group. This can be served on celery and with any type of chips. I hope you give this recipe a try.


Supplies

Ingredients for Spicy Chicken Dip:

1 pound rotisserie chicken

1 cup Buffalo wing sauce

2 - 8 ounce packages cream cheese, softened

1 - 16 ounce bottle ranch dressing

1/2 cup diced celery

1 - 8 ounce shredded cheese medley (Monterrey Jack, Cheddar Cheese & Mozzarella)

1/4 cup blue cheese crumbles, optional

Garnishment for Spicy Chicken Dip:

Cilantro leaves

Corn chips or Tortilla chips

Celery - cut into 3-inch sticks

Jalapeño - sliced

Equipment:

1 Medium Baking Dish

1 spoon

1 spatula

1 kitchen scissors

2 potholders

Serves: 8 to 10

Step 1: Combine Chicken & Wing Sauce

1) Add shredded chicken to bottom of a lightly greased casserole baking dish. Spread chicken evenly from corner to corner. If pieces there are large pieces, use kitchen scissors to trim.

2) Pour buffalo wing sauce over shredded chicken in baking dish.

Step 2: Heat Cream Cheese & Dressing

1) in a saucepan, combine cream cheese and ranch dressing over medium heat.

2) Stir until mixture is smooth.

3) Pour over chicken. Use spatula to evenly spread from corner to corner.

Step 3: Add Celery & Cheese

1) Sprinkle diced celery evenly over chicken.

2) Sprinkle shredded cheese medley evenly over celery and chicken.

3) Add blue cheese crumbles, optional on top of all layers in casserole baking dish.

Step 4: Bake Chicken Dip in Oven

1) Heat oven to 350 degrees Fahrenheit.

2) Bake, uncovered in oven 30 to 40 minutes or until bubbly.

3) Remove from oven; let stand 10 minutes before serving.

Step 5: Garnish Chicken Dip & Serve

1) Serve dip with corn chips or tortilla chips.

2) Serve dip with celery cut in 3-inch pieces on a tray.

3) Cut cilantro leaves on tray along with a sliced Jalapeño,

4) All of these garnishes can be used in any combination with this spicy chicken dip.
