Simple Repeatable Reliable Worcestershire Pecan Recipe

Two cups of 'raw' pecans.

One cup of Worcestershire sauce. I recommend the brand name for consistent results.

Step 1: Roast Raw Pecans

Roast the uncooked pecans on a parchment paper covered pan in an oven preheated to 275 F (135 C) for about ten minutes. Stir once halfway through.

You can roast longer for a crunchier finished pecan.

Save the parchment paper in the pan for a later step.

(You will need the oven again at 275 F in the finishing step)

Step 2: Cook Down the Sauce

Add the pecans and Worcestershire sauce into a good pot, set the stove to medium heat.

I used a six quart pot, you want the pecans in a fairly thin layer (see the pictures).

Stir occasionally, this is similar to sugaring pecans.

*But do not cook this in an unlined copper pot as you might when sugaring pecans, Worcestershire sauce is acidic.

Watch the boil, eventually most of the liquid will evaporate.

Stir just enough to keep the pecans coated, you don't want them to break up.

I cooked until all of the liquid was gone and the mixture just started to smoke a bit (see last picture).

Don't leave your pot unattended or you will probably burn them.

Step 3: Dump and Separate

Dump your pecans out onto a non-stick surface and separate pecans to cool.

I am fortunate to have a marble slab on my counter top, which is ideal.

They are very sticky at this point.

They are edible and delicious now, but would be messy for sharing.

Step 4: Return to Pan and Roast Again to Finish

After the pecans have cooled place them on the parchment paper covered pan used in the first step.

They are still very sticky, and separating them in this step is tedious.

Return pecans to oven preheated to 275 F (135 C), roast another 20 minutes.

Step 5: Finishing Up

Remove pecans from oven and allow them to cool.

Almost all of the stickiness will be gone.

If they are still too sticky, return to 275 F oven for another ten minutes or so.

They are suitable for snacking on or bagging for gifts, this batch fits in a one quart ziplock bag.

If these were just for me I would have added ground cayenne pepper in the first step, I like them spicy.

Step 6: Clean Up

Almost nothing to it, wipe down the counter, discarded the used parchment paper.

My pot cleans up nice.

Don't forget to turn off the stove and the oven!
