In this instructable I will show you how to make acorn muffins. This recipe for acorn and blueberry muffins is really easy to make, and it is awesome to use acorn flour which I made myself. In another future video/instructable I will show you how to process acorns and make acorn flour. Acorns have been eaten for many many years, and have been a staple/comfort food for many people. Acorns as a food aren't as popular now, but they are still awesome! And I love homemade muffins, brings me back to my childhood when I would wake up to the smell of fresh baked muffins. Step 1: Ingredients/Tools

Ingredients:

  • 1 1/2 cups all-purpose flour (192g)
  • 3/4 cups of acorn flour (90g)
  • 1/2 cup of wheat bran (30g)
  • 1/2 tsp of salt (3g)
  • 1 1/2 tsp of baking soda (7g)
  • 1 1/2 tsp of baking powder (7g)
  • 1 1/3 cup of milk (Whole, 1%, 2%, almond, buttermilk) (320mL)
  • 1 large egg 1 tsp of vanilla extract (5mL)
  • 1/3 cup melted butter (salted or unsalted) (75g)
  • 2 Tbsp of honey (optional) (30g)
  • 1/4 cup packed brown sugar (light or dark) (50g)
  • 1/2 cup of chopped nuts (pecans, walnuts, etc.) (62g)
  • 1/2 cup of blueberries (75g)

Tools:

  • hand mixer
  • bowls
  • spatula
  • whisk
  • muffin pan
  • muffin cups
  • spoon

Step 2: Mix the Dry Ingredients

First preheat the oven to 375 F (190 C). Now let's mix our dry ingredients together in a large bowl. We will mix everything but the brown sugar (all-purpose flour, acorn flour, wheat bran, salt, baking soda, and baking powder). Use a whisk to do this.

Step 3: Mix Everything Else

Now in another larger bowl let's mix our milk, egg, vanilla extract, melted butter, and brown sugar, using a hand mixer or stand mixer. You could also use your whisk at this point as well.

Step 4: Mix and Scrape

Next we will combine our dry ingredients with our other mixture about half at a time, then mix, then scrape the sides of the bowl as needed, then repeat the process until all the flour is combined.

Step 5: Folding Time

Next clean off the beaters and fold in the pecans and blueberries. You don't want to use your mixer at this point because you will just wind up mashing up the blueberries, haha, but you certainly could if you wanted. Now your batter is ready to go.

Step 6: Fill and Bake

Next fill up your muffin pan with the batter. I am using paper cups, but you can just grease the muffin pan too if you wish. Once they are all filled to the top, bake your muffins at 375 F (190 C) for 18 to 25 minutes, until the tops are golden brown and a toothpick comes out clean after poking them. Then let them cool for about 5 minutes before transferring them to a wire rack to cool the rest of the way. Now enjoy! :) Nice hearty, flavorful, acorn blueberry muffins. Yummy!
