In this instructable I will show you how to make cinnamon roll twist bread or sometimes called cinnamon roll braided bread. I LOVE cinnamon rolls, they are one my favorite treats and things to eat for breakfast or for a snack. Nothing like fresh warm cinnamon rolls in the morning. This recipe is a "twist" on a classic recipe. It comes out looking like a cool wreath of cinnamon bread goodness. Your family and friends will definitely be impressed by this bread. It is super easy to make, if I can do it, you can do it, let's get baking!

Step 1: Ingredients/Tools

Dough:

  • 2¾ cups all-purpose flour or bread flour (340 to 350 g)
  • ¼ cup sugar (56 g)
  • 2 tbsp. unsalted butter (30 g)
  • 1 large egg
  • 1 package instant yeast (or 2¼ tsp. of active dry yeast) (9 g)
  • ½ cup water (118 ml)
  • ¼ cup milk (59 ml)
  • 1 tsp. salt (4 g)

Filling:

  • 3/4 cup white granulated sugar (150g)
  • 3 Tbsp softened butter (45g)
  • 1 tbsp. ground cinnamon (15 g)

Tools:

  • Bowls
  • Whisk
  • Rolling pin
  • knife
  • sheet pan
  • silicon mat or parchment paper
  • damp cloth
  • plastic wrap
  • wooden spoon
  • basting brush

Step 2: Start the Yeast

First let's get the yeast started. Combine your milk and your water and heat it up to about 105 to 115 degrees F. Add about a tsp. of your sugar to the mixture as well. Then add in your yeast. Let the yeast sit for about 10 minutes until it gets foamy/frothy. If after 10 minutes the yeast isn't foamy, start again. The yeast may be bad, or old, or the liquid was too hot or too cold.

Step 3: Butter, Sugar, Egg, Whisk

Now let's melt two tablespoons of butter and then add that to a large bowl along with your yeast mixture. Add the rest of your sugar and your egg, then whisk to combine everything.

Step 4: Flour, Stir, Flour

Now let's start adding in our flour. Don't put it all in at once, add it about a cup at a time, and after a cup of flour is added, add your salt with it, then use a wooden spoon to mix the flour in, then add more flour, etc. after you have added about 2 to 2 1/4 of the cups of flour, the dough will have come together. Now put it on a flour dusted surface to knead.

Step 5: Knead, Cover, Rise

Now let's knead our dough for 8 minutes. You can hand knead it or use a stand mixer with a dough hook. Next place the dough in a large bowl that has been greased with kitchen spray or oil. Cover the dough with a damp cloth and let the dough rise for 1 to 1 and 1/2 hours, until the dough has doubled in size.

Step 6: Roll and Butter

Next after the dough has risen, punch it down, and then add it to your floured surface and roll it out into a rectangle. Then add your softened butter. You will need about 3 tablespoons or so of softened butter.

Step 7: Sugar, Roll, Cut

Next we will combine about 3/4 cups of white granulated sugar with 1 tablespoon of ground cinnamon. Generously apply the cinnamon and sugar to the buttered surface of the dough. Then roll it up lengthwise. Now cut down the middle of the roll.

Step 8: Pinch, Twist, Curl, Pinch

Now we pinch the two top ends together and braid/twist the two halves. Then curl them around to meet each end and pinch those ends together, making a circle, of twisted cinnamon roll dough.

Step 9: Cover, Rise, Bake, Enjoy

Next cover the dough loosely with plastic wrap and let the dough rest/rise for another 20 to 30 minutes. Now bake it at 375 degrees F (190 C) for 20 to 25 minutes until it is nice and golden brown on the top. The top will form a nice sugary and cinnamon crunchy crust, and then it will be nice and soft on the inside...so yummy! Enjoy! Try not to eat it all yourself. ;)
