In this Instructable I will show you how to make cake mix pancakes, more specifically funfetti pancakes. This funfetti pancake recipe is easy to make using very simple ingredients and of course a cake mix box. Next time you want to make a cake or have pancakes why not combine the two. You can use whatever cake mix that you want. :) If I can do it, you can do it, let's get started!

Step 1: Ingredients/Tools

Ingredients:

  • 1 cake mix box (any kind)
  • 2 large eggs
  • 1/4 cup of oil (vegetable, canola, olive, etc.) (60mL)
  • 1/2 cup all-purpose flour (plain flour) (60g)
  • 2 to 2 1/2 cups of Milk (500 to 625mL)

Tools:

  • whisk
  • skillet or griddle
  • bowl
  • spatula

This recipe makes about 10 large pancakes.

Step 2: Whisk Those Eggs

First in a large bowl let's add in our two large eggs. Then beat them with a whisk for a few seconds.

Step 3: Oil and Milk

Now let's add in our oil and our milk and then mix really well with the whisk. You can certainly use a fork or spoon or something else.

Step 4: Flour Time

Next we will add in our flour and again mix it in with the other ingredients.

Step 5: Cake Mix!

Next we add in our cake mix. I am using a funfetti cake mix, but you can use whatever cake mix flavor you want. :) Mix that in with the batter. Now add in additional milk as desired. I wound up using the full amount of milk in the end. If you want thicker pancakes use a little less milk, if you want thinner pancakes you can add even more milk. :) Now that our batter is done, let's take it over to the stovetop.

Step 6: Preheat and Cooking

Now preheat your skillet or your griddle. If you are using a griddle set it to 350 F or 176 C. If using the stove set the heat to medium heat. Spray the surface with some cooking spray. Next use a ladle, spoon, or measuring cup and add some batter to the middle of your pan or on the griddle you will be able to get more then one.

Step 7: Cook and Flip

Now let the pancake cake sit and cook for a few minutes until you see little bubbles form on the top and the edges will look dull. Flip that cake over with a spatula and cook the other side. The other side will take less time about a 1 minute or so. Now check that other side, should be nice and golden brown. It is done! Put that pancake on a plate and cook up the rest of them.

Step 8: Toppings and Serve

It's toppings time! You can use whatever you want for the toppings, I chose to add some cool whip and some sprinkles. :) You could layer frosting or whipped cream or cool whip in between each pancake, add a classic glaze, syrup, whatever you want to do. These are fairly sweet, so I wouldn't go too overboard with the sugar. lol :) Plop some candles in it for a birthday cake breakfast! :) Enjoy!
