How to Make Chocolate Cupcakes with Cream Cheese Frosting Recipe from Scratch

In this instructable, we will be making Chocolate Cupcakes and topping them off with a home made Cream Cheese frosting. These chocolate cupcakes are super delicious, and really easy to make. Let's get baking. Follow the steps below or watch the video tutorial or do both! Enjoy!

Cupcake Ingredients:

  • 1 egg
  • 1/2 cup of canola or vegetable oil (118 ml)
  • 1 tsp of vanilla extract (5 ml)
  • 1 tsp of distilled white vinegar (5 ml)
  • 1 cup of water (237 ml)
  • 1 1/2 cups of flour (92 g)
  • 1 cup of sugar (200 g)
  • 1 tsp of salt (5 g)
  • 1 tsp of baking soda (5 g)
  • 1/2 cup of cocoa powder (62.5 g)
  • Large Bowl
  • Sifter
  • paper cupcake cups
  • cupcake pan

Step 1: Add Dry Ingredients

First let's preheat the oven to 350 degrees F (176 C). Now let's mix our dry ingredients together. I am using a Sifter. If you don't have a sifter, you can use a whisk, instead.

Step 2: Mix the Dry Ingredients

Now we just mix all our dry ingredients. I like to use the sifter because the cocoa powder sometimes is very lumpy, so the sifter will get out all the lumps.

Step 3: Add Wet Ingredients

Now in a separate bowl, we will add all of our wet ingredients. Water, oil, vinegar, vanilla extract, and the egg.

Step 4: Whisk, Add, Stir

Now we whisk together the liquid ingredients, then add the whole dry ingredient mixture. Then we use a wooden spoon and stir it all together really well.

Step 5: Scoop and Bake

Now we use a 1/4 cup and scoop up the cupcake batter and fill up the paper cups. the reason I use the 1/4 cup is to make sure I get the same amount of batter in each cup. We want to fill it up about 2/3 of the way full. Maybe just a bit more. Then when we are done we bake them in the oven at 350 degrees (176 C) for 15 to 17 minutes. When they come out they should look like the picture. mmm yummy!

Step 6: Cream Cheese Frosting Ingredients

Now we let our cupcakes cool all the way, about 20 minutes. While we wait for them to cool, it's time to make our Cream Cheese Frosting.

Cream Cheese Frosting Ingredients:

4 cups of powdered sugar (confectioner's) (512 g)

1/2 cup of softened butter (4 oz) (113 g)

8 oz of Cream Cheese (225 g)

2 tsp of Vanilla extract (10 ml)

Mixer

Rubbert Spatula

Large Bowl

Step 7: Combine Ingredients in a Bowl

Now let's combine all the ingredients, leaving half of the powdered sugar.

Step 8: Mix, Scrape, Add, Mix

Now we turn on our Hand Mixer or stand up mixer and mix (medium speed). After a few seconds we will need to scrape the sides of the bowl with a rubber spatula. Then we add the rest of our powdered sugar, and mix again, then scrape, and finally mix on hi for about 30 seconds or so, until it looks like the last picture. Nice and smooth and delicious!

Step 9: Decorate

Now we scoop our Cream Cheese frosting and place it in a large ziplock bag or a piping bag. We cut off the corner and our ziplock bag becomes a piping bag. If we are using a piping bag we just need to add a decorating tip. Then we decorate all of our cupcakes. This recipe makes about 18 cupcakes.

Step 10: Done!

Hurray! we are done. Time to eat!
