Step 2: Blend the Cream Cheese

Place the softened cream cheese in a large bowl and blend it until smooth with a hand mixer or you can use a wooden spoon as well.

TIP: If you forget to take the cream cheese out of the fridge ahead of time, you can soften it in the microwave with the defrost setting for a minute or so.

Step 3: Mix Those Oreos

Time to make those Oreo crumbs. Add 35 to 42 Oreos to a food processor. I usually use 40, depending on the Oreo package I buy. The Family size has around 50 or so and the normal package has around 38.

Blend the Oreos until you have left with nice crumbs.

TIP: If you don't have a food processor you can place the Oreos into a bag and smash them with a rolling pin.

Step 4: Finish the Filling

Add the Oreo crumbs about a third at a time to the large bowl with the cream cheese filling. Blend until incorporated. You may want to reserve a tablespoon or two of the crumbs to use as a topping later.

If you don't have a hand mixer, just use a wooden spoon to mix them together.

Step 5: Roll Them Up

Use clean hands or food-grade gloves and roll a little over a tablespoon worth into a ball and place it onto a sheet pan lined with parchment paper or a silicone mat. You should be able to get right around 24 of these, depending on the size you make them.

Once rolled, place the pan in the fridge for a few hours, or in the freezer for 30 to 45 minutes. Right now they are too soft to dip in the chocolate, and they need to be firmer.

Step 6: Melt the Chococolate

5 to 10 minutes before you want to dip the Oreo balls, melt the chocolate. You can use CandiQuick which is my favorite candy/chocolate coating, candy melts/wafers, chocolate chips, chocolate bars, etc.

Melt in a microwave-safe bowl in microwave for 30 seconds, then stir, and repeat until completely melted. If the chocolate is still a bit thick you can use a few teaspoons of shortening or vegetable oil to thin it out. The CandiQuik usually melts really thin making it super easy to dip.

You can also use the double boiler method if you don't want to use a microwave. Place the chocolate in a metal bowl on top of a small pot with about an inch of water in it. Set the heat to medium, and as the water heats up the steam will gently heat up the bowl, melting the chocolate.

NOTE: If you use regular chocolate chips, bars, etc. You will need to temper the chocolate if you want the treats to be able to sit at room temperature without getting soft/melting. Otherwise, you can just store them in the fridge or at room temp for about 30 minutes before needing to go back into the fridge. To be honest I rarely temper the chocolate. CandiQuik and Candy melts, don't need to be tempered since they don't have cocoa butter in them.

Step 7: Dipping Time

Now dip the balls in the chocolate. You can use a handy dipping tool, spoon, or fork. Make sure to tap it a few times to allow the excess to drain back into the bowl.

Place the dipped ball back onto the sheet pan lined with parchment paper or a silicone mat.

Step 8: Toppings Time!

If you want to leave them plain or add chocolate drizzle later, that is great, move on to the next one. But if you want to add a different topping like the oreo crumbs, nuts, sprinkles, do that right after they are dipped. Don't wait too long, especially if using CandiQuik or candy melts, because those dry/firm up quickly.

Have fun making different combinations of toppings/flavors.

Step 9: Let Them Set and Serve

Once you are done dipping and topping them, place them in the fridge for 15 minutes or so to set completely. Chances are if you used candy melts or CandiQuik, by the time you are done dipping the last ones, the first ones will already be set.

There you go! Super fancy, super easy, desserts. If you like you can place them in individual mini-muffin cups as well and present them that way, or to give them as a gift. Enjoy!
