In this Instructable of In the Kitchen with Matt, I am going to show you how to make cinnamon quick bread. I love this cinnamon bread recipe it is so easy to make. Some people refer to this as a cinnamon swirl bread, not to be confused with a cinnamon raisin bread which is made with yeast. This quick bread is sweet, soft, and moist and oh so delicious. Step 1: Ingredients and Tools

Ingredients:

  • 1 large egg
  • 1 cup of milk (250 ml)
  • 1/4 cup of oil, canola, vegetable, coconut, etc. (60 ml)
  • 1/3 cup sour cream, optional (80 g)
  • 1 1/3 cup white granulated sugar, divided (268 g)
  • 2 cups all-purpose/plain four (284 g)
  • 1 tbsp. baking powder (14 g)
  • 1/2 tsp. salt (2g)
  • 1 tbsp. ground cinnamon (8g)

Tools:

  • Bowls
  • Spatula
  • 9x5 bread pan, greased with shortening or butter and floured
  • whisk
  • wire rack

Step 2: Wet Ingredients

Preheat the oven to 350 F/176 C. Next in a large bowl whisk the large egg. Then add the milk, oil, and sour cream. Whisk all those ingredients together until well combined. Now add 1 cup of the sugar and whisk it in. The sour cream is optional, it makes the bread moister. You can certainly leave it out if you like. Don't make a special trip to the store just to get the sour cream.

Step 3: Dry Ingredients

In a separate bowl whisk together the flour, baking powder, and salt.

Step 4: Finish the Bread Batter

Now add half of that flour mixture to the bowl of batter and whisk it in. Then continue with the other half.

Step 5: Cinnamon and Sugar

In a small bowl add the remaining 1/3 cup of sugar and combine it with the ground cinnamon. Use a small whisk or a fork to mix it.

Step 6: Grease and Flour

Take a 9x5 bread pan and grease the bottom and sides with shortening or butter and then add about a tablespoon of flour and tap it around so it is coated then turn it upside down and tap out the excess. This will ensure the bread doesn't stick in the pan.

Step 7: Layer and Bake

Now pour in about half of the batter to the pan. Sprinkle on the cinnamon and sugar mixture and then add the remaining batter on top of that. Use a butter knife and draw zig-zags in the batter. Bake the bread on the middle rack for 45 to 55 minutes, until a toothpick comes out clean. Once the bread comes out of the oven allow it to cool in the pan for 10 to 15 minutes.

Step 8: Cool and Serve

After the pan has cooled a bit, take a cake spatula or thin butter knife and run it all around the edges of the pan, which will help loosen the bread. Then flip it over and remove the bread, it should come out easily, and then place it on a wire rack to cool completely. After it has cooled sufficiently, slice it up and serve! I like to add butter to mine, so yummy, but it is delicious plain as well. Enjoy!

This makes about 10 slices/servings.
