In this episode of In the Kitchen with Matt, I will show you how to make blondies. This homemade blondies recipe from scratch is really easy to make. What are they? Basically, they are a cross between a cookie and a brownie. But really they are just a cookie bar, that is called a blondie. The ingredients are essentially the same as cookies, minus a little bit of flour and baking soda or baking powder. They are gooey and super yummy. If I can do it you can do it. Let's get baking!

Step 1: Ingredients and Tools

Ingredients:

  • 1 large egg
  • 1/2 cup unsalted butter, softened or melted (113g) (you may use salted, but reduce the amount of table salt added by 1/4 tsp.)
  • 3/4 cup packed brown sugar (150g)
  • 1/4 cup white granulated sugar (50g)
  • 1 tsp. vanilla extract (4ml)
  • 1 cup all-purpose flour (120g)
  • 1/2 tsp. of table salt (2g)
  • 2/3 cup pecans or walnuts (85g)
  • 2/3 cup white chocolate chips (115g)

Tools:

  • hand mixer
  • wooden spoon
  • spatula
  • bowls
  • 8x8 pan
  • kitchen spray

Step 2: Cream Those Ingredients

First, preheat the oven to 350 F/176 C. In a large bowl add the egg, butter, brown sugar, and white sugar. Then cream the altogether with a hand mixer or stand mixer.

Step 3: A Bit of Vanilla for Flavor

Next add in the vanilla and mix that in really well. Then give the sides of the bowl a good scrap with the spatula.

Step 4: Flour Time

Next, add in the flour and salt and mix those in really well. After that, you can remove the beaters and clean them off and put the mixer away.

Step 5: Fold and Bake

Next, fold in the chopped pecans and white chocolate chips. Then spread the cookie dough uh I mean blondie dough in an 8x8 greased pan. I usually just use kitchen spray on the pan, but shortening will work too. You can also put a large piece of parchment paper down, which covers the bottom and goes up the sides. Bake it for 25 to 35 minutes, until it gets nice and golden brown on the top, the middle will be a bit gooey which is amazing. But if you want it to be more done, cover the top with foil and bake it for 10 more minutes. Now after they come out of the oven allow them to sit and cool completely before cutting into them. Enjoy! :)

Serve it with a side of vanilla ice cream? Yes, please! :)
