In this Instructable, I will show you how to make corn fritters at home. This easy homemade corn fritter recipe comes together quickly and you will be eating corn fritters in less than 30 minutes. All you need are a handful of easy to find ingredients, which you may already have at home. It is a great way to use that canned corn you have sitting in your pantry or food storage. Serve them with maple syrup, as a side dish for dinner, or eat them plain as a snack. If I can do it, you can do it. Let's get started!

Step 1: Ingredients and Tools

Ingredients:

  • 1 cup all-purpose/plain flour (120g)
  • 1 tsp. baking powder (5g)
  • 1/4 tsp. salt (1g)
  • 3 tbsp. white granulated sugar (45g) You can reduce it if you like. Especially for savory ones.
  • 1 large egg
  • 1/2 cup of milk (whole, 2%, 1%, Almond, etc.)
  • 1 tbsp. butter, melted (14g)
  • 15 oz can of whole kernel corn or kernels cut from fresh corn on the cob (432g)
  • Oil for frying (vegetable, canola, coconut, peanut, shortening, lard)

Tools:

  • Bowls
  • Spoons
  • Wooden spoon
  • Paper towel
  • Plate Tongs or spider ladle/strainer

Step 2: Whisk the Dry Ingredients

Begin, by getting a pot and filling it about 1 inch to 1 1/2 inch deep with cooking oil. This is for deep frying, you can also add less oil and pan fry these if you desire in a skillet. Set the heat to medium-high to heat up the oil to 350 F/176 C.

In a medium bowl whisk together the flour, baking powder, salt, and white granulated sugar. (The sugar is technically considered a "wet" ingredient) But for this just mix it in with the rest of the dry ingredients.

*For savory fritters, reduce the sugar to about 1 tsp. (5g)

Step 3: Finish the Batter

Now in a large bowl beat an egg with a whisk. Then pour in the milk and melt the butter just until barely melted, in the microwave or in a small pot on the stovetop, and pour that in. Whisk to combine. Next, add the flour mixture and stir with a wooden spoon or silicone spoon until well combined. The consistency will be fairly thick.

Step 4: Corn!

Open that can of corn, or cut off the corn from fresh ears, and add it to the batter. Stir and fold to incorporate the corn. All right the corn fritter batter is ready to go.

Note: This is a perfect excuse to use that can of corn that has been sitting in your pantry for ages, and only has a few months left until it expires, haha.

Step 5: Scoop and Fry

Once the oil is hot enough, use two spoons and scoop in some batter. Only do 5 to 6 at a time so it doesn't get overcrowded. Fry them for a few minutes per side, until they get nice and golden brown. Use a metal slotted spoon or a spider ladle to remove them, and place them on a plate lined with a paper towel.

If using just a skilled and less oil, after placing the blob of batter on it, press it a bit to spread it. Then shallow pan-fry until golden brown on both sides. They will wind up being more flat like a pancake.

Step 6: Eat Them!

Now it is time to eat those corn fritters. You can drizzle or dip them in maple syrup if you like, sprinkle powdered sugar over them, etc. Serve them as a side dish or just a snack. Some people will dip the savory ones in an aioli, horseradish, or a variety of other dips. Enjoy!
