In this instructable I will show you how to make a Pumpkin Roll. This pumpkin roll cake recipe is really easy to make and it perfect for the fall season, or any season really, especially if you like pumpkin! If I can make it you can make it, let's get baking.

Step 1: Ingredients/Tools

Ingredients:

  • 3/4 cup of all purpose flour (96g)
  • 1/2 tsp. baking soda (3g)
  • 1/2 tsp. baking powder (3g)
  • 1/2 tsp. ground cinnamon (3g)
  • 1/2 tsp. ground cloves (optional) (3g)
  • 1/4 tsp. of table salt (1g)
  • 3 large eggs
  • 1 cup of white granulated sugar (225g)
  • 2/3 cup of canned pumpkin (or use fresh) (150g)

Frosting:

  • 8 ounces of soften cream cheese (226g)
  • 1 cup of powdered sugar (confectioners) (125g)
  • 6 Tbsp. of unsalted softened butter (84g)
  • 1 tsp. of vanilla extract (5ml)

* Powdered sugar for the cloth and dusting.

Tools:

  • Hand mixer
  • whisk or sifter
  • bowls
  • plastic wrap
  • kitchen towel (thin)
  • spatula

Step 2: Mix the Dry Ingredients

First let's preheat the oven to 375 F. (190 C). Then let's whisk together in a medium bowl, our flour, ground cloves, cinnamon, salt, baking powder, and baking soda. Set bowl aside.

Step 3: Eggs, Sugar, and Pumpkin

Now in a large bowl mix together your eggs with your sugar. Use a hand mixer for this. Then add in your pumpkin, and mix again, scraping the sides with your spatula as needed.

Step 4: Flour Then Bake That Cake

Now let's add in our flour. I do it half at a time. We will only use a spatula to mix. Fold, stir, fold stir, scraping the sides as needed. We don't want to over mix with a mixer. Then pour the cake batter in a 10 by 15 inch sheet pan, that was spray and lined with wax paper or parchment paper. Then spray it again, and had flour. We want to make sure the cake doesn't stick after it is done baking. Then spread it out evenly in the pan. You can give it a few taps on the table to help level it out. Now bake it for 13 to 15 minutes, until the cake springs back after touching it.

Step 5: Powder That Towel

Now let's take a nice clean kitchen towel and dust it liberally with powdered sugar. It helps if the towel doesn't have the small loops. Now flip the cake over onto the towel and pull off the parchment paper. Then dust the top with powdered sugar.

Step 6: Roll and Cool

Now roll the cake up fairly tightly. Then let it cool. If you are in a hurry, let it cool in the fridge.

Step 7: Make the Frosting

In a medium bowl add your softened cream cheese and mix it with your hand mixer. Then add your vanilla extract and softened butter. Mix it will and scrape the sides as needed. Next add in your powdered sugar half at a time until well combined.

Step 8: Frost, Roll, Chill

Now let's unroll our cake and frost it. Then roll it back up without the towel. If you don't use enough powdered sugar on the towel it may stick a bit. Then wrap the cake in plastic wrap and place in the fridge to cool for at least an hour. This will allow the frosting to set and make it easier to cut.

Step 9: Finish It Off and Serve!

Now take it out of the fridge and unwrap it from the plastic wrap. Then dust the top with powdered sugar or your favorite frosting or topping. Then cut and serve! Enjoy!
