In this instructable I am going to teach you how to make rice pudding using the one-pot method. This rice pudding recipe is really easy to make, I had a request to make a video on rice pudding, so here we go. Typically served as a desert, but you can eat it whenever you want. Let's get started!

Step 1: Ingredients/Tools

Ingredients:

  • 1/4 cup plus 2 Tbsp. of rice (long grain, medium, or short) (65g)
  • 3/4 cup of water (177ml)
  • 1/8 tsp or pinch of salt (less then 1 g)
  • 2 cups of milk (whole, 2%, or 1%) (480ml)
  • 1/4 cup of white granulated sugar (50g)
  • 1/4 tsp. of vanilla extract (1.25 ml)
  • pinch of cinnamon (if desired)
  • raisins (if desired)

Tools:

  • Medium to Large stove pot
  • Stirring spoon or wooden spoon
  • plastic wrap
  • bowls
  • stove top or hot plate

Step 2: Prep the Rice

First we need to cook our rice. Add your rice, water, and salt to a medium to large stove top, this recipe makes two large servings, so I can get away with using a medium pot, if you double or triple the recipe you probably want to use a bigger pot. Make sure to stir in the salt afterwards.

Step 3: Cook the Rice

Now let's take the pot to our stovetop or hotplate and turn the heat onto medium high, and wait until the water starts to boil, once that happens turn the heat down to medium-low and let it simmer. I also at this point cover it with a lid. Then occasionally take the lid off and stir, so the rice doesn't stick to the bottom. I have a nonstick pot, which works nicely, but you can use whatever pot you want. Then once all the water has absorbed into the rice it is time for the next step.

Step 4: Add Milk and Sugar

Now we add our milk and our sugar, and turn the heat up to medium. We will stir occasionally and let it cook for 10 to 15 minutes, until it thickens up. We want a nice porridge like consistency. With that said you can cook it to whatever consistency that you like, it will thicken up even more once it cools a bit.

***If you want raisins, and you want them soft add them in about 5 minutes into the cooking. If you want them hard you can add them in at the next step when you add in the vanilla.

Step 5: Add Vanilla and Stir

Near the end it will probably be bubbling a lot, make sure to stir more frequently at this stage to keep it from sticking or burning on the bottom. Then when it is at the thickness that you want, turn off the heat and add your vanilla in and stir. Now you are done. :)

Step 6: Serve and Chill

Now serve it up, you can eat it warm or cold, if you are going to eat it cold, top it off with some plastic wrap and place in the refrigerator for 10 to 15 minutes or more. Make sure to sprinkle it with some cinnamon. :) There you go, yummy and easy rice pudding.
