In this episode of In the Kitchen with Matt, my friend Tanner and I will show you how to make amazing ribs in an Instant Pot. This easy fall off the bone baby back ribs recipe is so yummy, you will think they came from a high-end barbecue restaurant. The best part is they are completed in under 90 minutes! Ribs are one of my favorite meats to eat and these ribs are some of the best I have ever made and tasted. If we can do it, you can do it, let's get started!

Step 1: Ingredients and Tools

Ingredients:

  • 3 pounds of baby back ribs (1 1/3 kg)
  • 1/4 cup kosher salt
  • 3 Tbsp. ground pepper (more or less according to taste)
  • 1 cup of water (250ml)
  • 6 to 7 drops of liquid smoke
  • 1/2 cup barbecue sauce (115g) more as needed

Tools:

  • Instant Pot
  • Tongs
  • Sheet pan
  • Aluminum foil
  • Basting brush
  • Scissors
  • Butter knife

Step 2: Pat Ribs Dry

First, we need to open up the package of ribs and pat them dry with a paper towel. Make sure to do both sides.

Step 3: Remove Membrane

Next, take a butter knife and get under the membrane that is on the back of the ribs attached to the bones. After you get the membrane loose you can use your hands to remove it. If for some reason you are not able to remove it, you can leave it on.

Step 4: Seasonings

Next season the ribs heavily with kosher salt and ground black pepper. You could also add some garlic powder.

Step 5: Prep the Instant Pot

Now remove the Instant Pot lid and add 1 cup of water to it. Also, add in 6 to 7 drops of liquid smoke. Make sure the little trivet (rack) is on the bottom so the ribs can rest on it.

Step 6: Curl, Place, Set

Next, curl up the ribs with the bones on the inside and place them in the Instant Pot. Put the lid on and lock it in place then manually set the Instant Pot to 23 minutes. Let it run its course. It will take time to pressurize then the 23-minute timer will start. After the timer goes off just leave it be for 20 to 25 minutes for a natural release of the pressure instead of a quick-release using the switch on the top. After that then you can flip the switch and release any remaining pressure. This natural release will further cook the ribs and make them more tender.

Step 7: Remove the Ribs

Next, open up the Instant Pot and remove the ribs with tongs. Look how awesome those are. Be gentle with the tongs, you don't want to damage the ribs. Place the ribs on an aluminum foil-lined sheet pan. Do this for easy clean up later. Or place directly into a large baking pan.

Step 8: Sauce and Bake

Next cover the top of the ribs with lots of barbecue sauce. You can use storebought sauce or use my homemade barbecue sauce which you can find here. Then bake the ribs in a preheated oven at 450 F (232 C) for 13 to 15 minutes until the sauce turns into a crusty glaze on top. Remove them from the oven and allow them to cool before serving. Enjoy!
