Step 1: Add Dry Ingredients for Batter

First let's preheat our oven to 400 degrees F. (204 C) Now let's start our batter. We will mix our salt, baking, powder and our flour together. I just use a whisk to do this. (Don't use the flour for the Topping, that is separate).

Step 2: Add Egg, Oil, Milk, Stir

Now let's take a large bowl and add our egg, oil, and milk. Mix that all together.

Step 3: Add Sugar and Mix

Now let's add our sugar and mix that into the batter. (again from the Batter list, don't use the sugar from our Topping list).

Step 4: Add Flour

Next we will add our flour a third of it at a time and mix until all the flour is incorporated. It might get a little too thick for your whisk, if that is the case, use a wooden spoon, or use a hand mixer. Then scrape the sides with a rubber spatula, to make sure all the flour is mixed in really well.

Step 5: Fold in the Blueberries

Let's now fold in our fresh blueberries. You can use froze blueberries if you like, but make sure to use them frozen, don't thaw them out first. It will wind up getting mushy and turn your muffins blue! haha. Just gently fold them in with your spatula, you don't want to crush the berries.

Step 6: Fill Up Your Paper Cups

I like nice big muffins, so for this recipe, it makes about 9 big muffins. If you fill the cups 2/3 full, it will make about 12 muffins. So use a spoon and your spatula and fill up the paper muffin cups. (if you don't have muffin cups just spray your muffin pan with kitchen spray)

Step 7: Make Topping

Now it is time to make our yummy topping. From our Topping Ingredients list, we mix together our flour, cinnamon, sugar, and softened butter. First start with a fork or pastry blender and mix it together. Then you can use your fingers which works really well!

Step 8: Put on Topping and Bake

Now let's put the topping on and bake! We will bake these for 20 to 25 minutes. You know they are done when you put a toothpick in them and it comes out dry. Look at that yummy crusted over tops of those muffins!! mmm
