In this instructable I will show you how to make Japanese Hibachi Style fried rice. I had a request to make Japanese fried rice so that is what I am going to do. I don't own a hibachi style grill like they use in the restaurants so I am just using a skillet, but the results are pretty much the same. Japanese fried rice is really easy to make if I can make it you can make it, let's get started.

Step 1: Ingredients/Tools

Ingredients:

  • 3 Tbsp. Olive Oil (45 ml approx.)
  • 2 cups of cooked rice (chilled overnight in fridge) (400g approx.)
  • 1/2 cup diced carrots (60g approx.)
  • 1/2 peas (75g approx.)
  • 2 large eggs
  • 1/2 cup green onion (115g approx.)
  • 1 cup cooked diced ham, cooked chicken, pork, or beef (150g approx.)
  • 4 cloves of Garlic, minced
  • 2 - 3 Tbsp. of butter (30g approx.) (you can add more if you like)
  • 2 - 3 Tbsp. of soy sauce (30ml to 40ml approx.)

Tools:

  • skillet or wok
  • spatula or wooden spoon
  • baking sheet
  • plastic wrap

Step 2: Prep the Rice

First we need to cook our rice, I usually cook 1 cup of uncooked rice, which gives me right around 2 cups of cooked rice. I am using a white long grained rice here. After your rice is cooked, spread it out on a baking sheet, then cover it with plastic wrap and place in the fridge over night. Then the next day the rice will be dried out, not sticky at all, and will come a part nicely. I just transfer it to a bowl at this stage.

Step 3: Sauté the Veggies

Now set the stovetop on to medium high and heat up your skillet or wok. Place the oil in the pan, and let it heat up a bit, then add your peas and carrots, for convenience I just used the frozen peas an carrots, but you can certainly cut up your own. Sauté them for a few minutes.

Step 4: Cook the Eggs

Next, push the peas and carrots to one side of the pan and crack your eggs and place in the pan on the other side. Scramble them until almost completely done, they will continue to cook as we keep adding ingredients.

Step 5: Onions, Ham, and Garlic

Now let's add in our green onion, ham (or cooked chicken, beef, etc.), and fresh minced garlic. Then mix them all together really well, for about 30 seconds of more cooking.

Step 6: Rice and Butter

Turn up the heat to high. Now add all of the rice at once, mix in with the other ingredients and then add in your butter. Cook all the ingredients until the butter is completely melted. Another minute or so.

Step 7: Soy Sauce

Now just add in your soy sauce. I would start with 2 Tablespoons first, then taste it, you can always add in more after the fact. Mix in the soy sauce and continue stirring the mixture for another minute, then it will be done. Transfer to your serving dish, and enjoy!
