Step 1: Mix the Dry Ingredients

Add the flour, sugar, baking powder, salt, and cinnamon to a medium bowl and whisk. Or you can use a sifter too if you like.

Step 2: Soak the Oats

In a larger bowl add the oats and the milk. Give them a mix and then let them soak for 5 minutes.

Step 3: Finish That Pancake Batter

Add the egg and the oil to the oats mixture and whisk. Then add in all of the flour mixtures and stir until well combined. I usually use my spoon for this, the whisk doesn't work as well, but you can still use a whisk if you want.

The batter should be a bit thin or soupy.

Step 4: Cook Those Pancakes

Time to cook up the oatmeal pancakes. Lightly spray a skillet with cooking oil or you can use butter. Set the heat to medium heat or 350F on your pancake griddle. Allow the pan or griddle to heat up completely.

Use a half-cup measuring cup and scoop some batter onto the hot skillet or griddle. Allow the first side to cook until there are bubbles in the middle and it looks dry around the edges. This usually takes 1 min to 1 minute and 45 seconds.

You can always check under it with your spatula. When the pancake is golden brown on that side give it a flip and cook the other side.

The second side will take less time around 25 to 30 seconds. Once cooked remove and serve. I usually stack them on a plate first as opposed to serving them one by one to people.

Step 5: Serve Those Pancakes

This recipe makes about 6 medium pancakes. For these particular pancakes, I like to drizzle honey on top, and then a bit of powdered sugar. But you can totally use maple syrup, fruit syrup, fresh fruit, whipped cream, etc. So many pancake topping options.

Enjoy!
