Who likes donuts or doughnuts? In this instructable I will show you how to make donuts, pumpkin cake donuts to be precise. Tis the season for pumpkin goodies. These pumpkin cake donuts are super yummy, super light and fluffy, and of course, are really easy to make, if I can make them, you can make them. Let's get baking!

Step 1: Ingredients

Ingredients:

  • 1 1/2 cups of canned pumpkin
  • 1 1/2 cups of granulated sugar
  • 1/2 cup of canola or vegetable oil
  • 3 large eggs
  • 2 cups of all purpose flour (2 tablespoons less)
  • 1 1/2 tsp of baking powder
  • 1 1/2 tsp of salt
  • 3/4 tsp of cinnamon
  • 1/4 tsp of nutmeg

Topping:

  • 1/2 cup of granulated sugar
  • 3 Tbls of cinnamon

Step 2: Mix First Batch of Ingredients

First let's preheat our oven to 350 degrees F. Then let's add our canned pumpkin, oil, sugar, and eggs. Next, using a mixer, give it a good mix until all combined.

Step 3: Mix Dry Ingredients

Now let's mix together our remaining dry ingredients (flour, baking powder, salt, cinnamon, nutmeg) with a whisk or sifter.

Step 4: Combine and Stir With Wooden Spoon

Now we add the flour mixture about 1/4 at a time and stir/combine it together with a wooden spoon. We don't want to over mix it, that is why we are only using a wooden spoon and not our mixer. When it is done it will form a nice batter.

Step 5: Add to Donut Pan

Now we add our batter to our donut pan with a spoon, or a piping bag. Fill them up about 3/4 of the way full. Then place them in the oven to bake for 13 to 14 minutes. Poke it with a toothpick, if it comes out clean they are done!

Step 6: Let Donuts Cool

Now we let the donuts cool for about 5 minutes. Next take your 1/2 cup of sugar and combine with your 3 tablespoons of cinnamon, use a fork or whisk for this.

Step 7: Dip in Sugar Mixture

Now we just dip our donuts in the sugar mixture. You can just do one side, or cover the whole thing. If you are having a bit of trouble with the sugar sticking, just lightly baste the top with melted butter. You might also choose to use a glaze on some of them. A classic vanilla or chocolate glaze works great on these. You can then place them on a rack or plate and you are done.
